Heat a large heavy bottomed pot or Dutch oven slowly over medium heat on the stove top. Add a drizzle of olive oil to the pan and then add the bacon. Cook for 3-4 minutes or until the fat is rendered out of the bacon.

Remove the sausage from its casing and add it to the pan. Stir with a wooden spoon or spatula to break the sausage into smaller chunks. Continue to cook for about 10 minutes, stirring occasionally. Some browning of the meat and in the pan is ok, but don't let it take on a lot of color. There should be a good amount of fat in the pan after the 10 minutes of cooking. Don't remove the fat, this will absorb into the bread and add flavor.

Add in your knob of butter, onion, celery, garlic, and carrot to the pan. Stir to combine and add a pinch of salt. (Do not add too much salt since the bacon and sausage already contain a good amount of salt). Reduce the heat to medium low and cook the meat and vegetable mixture for about 5 minutes. At this point, the vegetables will begin to soften. Test the carrots by eating a small piece, they should not be crunchy.


Add in the chopped apricots and walnuts, stir to combine. Continue to cook while occasionally stirring for another 5 minutes. At this point, everything should be well cooked, softened, and combined. Stir in the chopped herbs, chicken stock and stuffing bread mix. Mix to combine and remove from heat.



At this point, everything can be refrigerated for later. This mix can be held in the fridge for 2 days. This works great for those who plan their thanksgiving meal prep in stages. If you are stuffing a turkey, you can fill the turkey with the stuffing now. We like to cook the turkey and stuffing separately.
If baking the stuffing separately, butter a 9x13 baking pan and fill the baking pan with your stuffing. Cube up your stick of butter and place the cubes on top of your stuffing. Cover with aluminum foil.

Bake the stuffing for 30 minutes at 325 F. After the 30 minutes are up, remove the aluminum foil and cook for another 20 minutes. The bread will start to crisp up and get some color around the edges. If you like a more even browning, stir halfway through the 20 minutes. If you prefer a softer, more mushy stuffing, do not take the aluminum foil off after the 30 minutes and bake for a full 50 minutes with the foil on.
Once the stuffing is cooked through and hot, you can serve it immediately or reserve it to be warmed up right before serving. Enjoy!
